PESTo & eggplant pizza
What can you do with an eggplant?
Turn it into a show-stopping, crispy-crunchy pizza.
We used a cashew parmesan dip that beautifully caramelised while baking, and then garnished with bright, fragrant Basil
that ties it all together.
Ingredients:

Sugo tu Pizza Dough
-
Sugo tu pizza sauce
-
Olive Oil
-
1 cups shredded Mozzarella
-
Sliced Eggplant (thin)

Fresh Basil
-
Pesto dip - we used Simply Delish Chunky Dip from Woolies (pic below)
Method:
1) Pre-heat the oven to 250C.
2) Thaw the dough and let it double in size
3) Slice the eggplant and place on an generously oiled baking tray and bake until just turning golden.
4) Stretch the dough, top with sauce, then cheese, then sliced eggplant and dollops of pesto dip.
5) Bake for about 6 minutes until the edges are golden brown
6) Season with salt and fresh Basil.
