grilled eggplant PIZZA


A Sugo Tu house favourite, grilled eggplant with fresh basil and chilli...understated but so delicious!

Some tips before you get started: 

  • Watch our dough prep video here 

  • Flour your dough generously

  • Before topping, place your stretched dough onto a  piece of baking paper that way you can easily slide it onto a baking tray or pizza stone

  • No one likes a soggy pizza - less is more when it comes to toppings!


  • 1 x Sugo Tu pizza dough disc

  • 100g bocconcini or shredded mozzarella (or try Scamorza for a smokey flavour)

  • 1 small eggplant, 1cm slices 

  • Sea salt

  • Fresh Basil to garnish

  • Fresh Chilli optional

  • Extra virgin olive oil


Pre-heat the oven to 250 deg Celsius. Thaw dough according to pack instructions. Place sliced eggplant onto a well oiled baking tray, drizzle with an extra glug of oil and sprinkle with salt. Bake until golden.

Stretch the dough to about 11" and place on a piece of baking paper.


Top with sauce, cheese and eggplant. 

Bake for 5-8 minutes or until the crust is blistery and golden brown.

After baking sprinkle with fresh basil, chilli and a generous amount of sea salt.
