
grilled eggplant PIZZA

This is the ultimate Italian-style comfort meal, perfect paired with a glass of red wine. You can mix up the recipe by using a Scamorza (smoked mozzarella) and add chilli for an extra kick.
You won't even know it's meat free it's so satisfying.

Flour your dough generously

Before topping, place your stretched dough onto a piece of baking paper that way you can easily slide it onto a baking tray or pizza stone

No one likes a soggy pizza - less is more when it comes to toppings!
Ingredients:

1 x Sugo Tu pizza dough disc
-
75g Sugo tu Pizza Sauce
-
100g bocconcini or shredded mozzarella (or try Scamorza for a smokey flavour)

1 small eggplant, 1cm slices and grilled

Sea salt
-
Fresh Basil to garnish
-
Fresh Rocket to garnish

Fresh Chilli optional

Extra virgin olive oil
Method:
Pre-heat the oven to 250 deg Celsius. Thaw dough according to pack instructions. Place sliced eggplant onto a well oiled baking tray, drizzle with a generous glug of oil and sprinkle with salt. Bake until golden.
Stretch the dough to about 11" and place on a piece of baking paper.
Top with sauce, cheese and eggplant.
Bake for 5-8 minutes or until the crust is blistery and golden brown.
After baking sprinkle with fresh basil, rocket, chilli and a generous amount of sea salt.
